Keto Vegan Chocolate Cake | Diabetic Friendly | Gluten-Free and Sugar-Free

The cake market and customer requests are growing at an incredible pace. The last two years, in my shop @MyPlantCake keto friendly cakes are becoming very popular. The most difficult thing, my clients say, is to find not only ketogenic cake, but also vegan, and moreover, gluten-free.
This means that vegan keto-friendly cake is totally sugar-free, low carbs, eggless, lactose-free and as a bonus for you, my dear friends, free of gluten free.

This cake is for:
*vegans and vegetarians
*for keto diet followers and sugar-free enthusiasts
*for people suffered from diabetes
*for lactose intolerance people
*for people with allergies to eggs
*for people with celiac disease
***for everyone who wants healthy, made from only whole food ingredients, very delicious and chocolate cake 🙂

Wet ingredients:
300 ml Almond milk
2 shots espresso (or sub with 30 ml almond milk)
120 ml coconut oil extra virgin, melted
216 gr Monk Fruit sweetener
1 1/2 tbsp Vanilla extract

Dry Ingredients:
3 tbsp ground flaxseeds
1/4 cup + 1/8 cup tapioca flour
1/2 cup raw cacao powder
3/4 cup white rice flour
3/4 cup quinoa flour
1 1/2 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt

Bake 40-60 minutes at 350F/175-180C

200 gr raw cashew, soaked overnight
45 gr raw cacao powder
70 gr monk fruit sweetener
250 ml almond milk
75 ml coconut oil extra virgin, melted
180 gr coconut butter, melted
1 tbsp vanilla extract
1/2 tsp salt

Blend well in high speed blender, leave in the fridge for 4 hours or overnight.

100 gr defrosted or fresh cherries for filling.
